Ingredients:
4 egg whites
1 Tablespoon canola oil
1/3 cup matzo meal
4 sliced carrots
6 cups chicken or vegetable broth

Directions: Beat
egg whites until foamy. Add oil, matzo meal and blend. Cover and refrigerate for
20 minutes. Shape into six balls. Boil large pot of water. Drop balls into water
and add carrots. Reduce heat, cover and simmer 30 minutes. Drain the water. Add
broth and heat.
Prep Time: 20 min.
Cooking Time: 45 minutes
Serving Suggestions:
Good with parsley and pepper
