Serves 6
Ingredients:
- 4 lb. pumpkin or butternut
squash, peeled
- 2 onions, peeled
- 2 apples, cored
- 2 cups chicken stock
- 1 tsp. nutmeg
- 1 tsp. salt
- 2 cups water
- 2 1/2cups milk
- Freshly ground pepper
to taste
- 1/2 cup light sour cream
- Chopped chives

Directions:
Roughly chop pumpkin, onion
and apples. Place in heavy-based saucepan. Add stock, nutmeg salt and pepper.
Bring to a boil. Cover and simmer 35-40 minutes until pumpkin is tender. Puree
mixture in a food processor or rub through a sieve. Return to pan and stir in
milk. Adjust seasonings, serve garnished with sour cream and chopped chives.
