Serves 4

Ingredients:

  • 1 1/2 lbs Hamburger
  • 2 cans Enchilada sauce (10 oz. or around there.)
  • 2 cans kidney beans (Med. size cans, not the large.)
  • 3 cup's shredded cheddar cheese
  • Minced onion or a tablespoon of dried minced onions
  • chili powder - 1 tb. or so, more if you like it.
  • 1 tsp. garlic powder
  • dash of salt and pepper
  • 6 oz. package of corn chips (I always get extra because the kids like to add more when their eating it)

Directions:

Preheat oven to 3500 degrees. Brown hamburger with onion, drain. Add all remaining ingredients, but the chips. Mix well and put in a baking pan. Gently stir in the chips so they are mixed just a bit. Bake for 20 minutes. Serve with the rest of the corn chips.

Prep Time: 10 - 15 minutes        Cooking Time: 20 minutes
