Serves 8 people
Ingredients:
- 14 oz can stewed tomatoes
- 4 celery stalks, chopped
- 3 thinly sliced carrots
- 2 cups shredded cabbage
- 1 cup green beans, cut
- 1/3 tsp salt
- 1/4 tsp pepper
- 1/2 cup parsley, diced
- 1 tsp lemon juice
- 2 leeks, white part only,
sliced
- 3 cloves minced garlic
- 1 tsp olive oil
- 4 tsp instant vegetable

Directions:
Cook leeks and garlic in
hot oil until tender. Add 8 cups water, bouillion, tomatoes, celery, carrots,
and boil. Simmer for 25 minutes. Add cabbage, beans, salt and pepper. Boil, and
reduce heat to simmer, 15 to 20 minutes, until vegetables are tender. Add parsley
and lemon juice.
