Serves 6
Ingredients:
- Turkey neck, giblets
and liver, cut in cubes
- 5 cups turkey stock
- 1 cup water
- 1/4 cup flour
- 1 celery rib, sliced
- 1 carrot, peeled and sliced
- 1 onion, quartered
- 1 teaspoon poultry seasoning
- 1/2 teaspoon ground black
pepper
- 1 bay leaf
- 1 teaspoon salt

Directions:
In a medium saucepan, bring
the turkey stock to a boil. Add giblets, celery, carrot, onion, bay leaf, pepper
and salt. Cook at a simmer for one hour. Gradually dissolve flour in water. Slowly
add the flour mixture, while stirring, to the turkey stock. Boil until it is thick.
