Ingredients:
2 eggs
1/2small onion diced
1 tsp. salt
1/2 tsp. baking powder
2 tbsp. flour
3 cups cubed raw potatoes
3 tbsp. oil

Directions: Combine
eggs, onion, salt, baking powder, flour and ½ cup of potatoes in blender
and grate until well mixed. Add remaining potatoes and chop until potatoes are
reduced to a thick, coarse mixture.
Heat oil in saucepan at
medium heat. Pour mixture into saucepan, making medium sized circular pancakes.
Cook each side of pancake until golden brown. Remove from heat and serve.
