Serves 4
Ingredients:
3 tomatoes sliced
2 tbsp. cornstarch
2 cups milk
1 tbsp. chopped basil
3-6 oz. grated Mozerella cheese
1 cup breadcrumbs

Directions: Grease a shallow oven-proof baking dish and arrange the tomatoes
at the base of the dish.
Blend cornstarch with ¼
cup of milk, pour into a saucepan with the remaining milk, and basil. Bring
to a boil on the stovetop. Cook for one minute stirring constantly.
Remove from the heat and
add three-quarters of the cheese. Pour over the tomatoes and sprinkle with
breadcrumbs.
Top with remaining cheese
and bake at 400° F for 10 minutes or until lightly browned.
