Serves 4-6

Ingredients:

• 4 large potatoes, peeled and diced
•2 red, yellow or orange bell peppers, seeded and diced
•1 bunch green onions, diced
•Paprika, to taste
•Oregano, to taste
•Salt, to taste
•Course ground black pepper, to taste
•1/2 cup flour
•8 oz. grated cheese
•6 oz. low fat or fat free chicken broth

Directions: Place diced potatoes, peppers and green onions into resealable plastic bag. Add herbs, flour and 6 oz. of the cheese. Seal bag and shake vigorously until vegetables are coated evenly.

Empty bag into 8x8 casserole dish that's been coated with cooking spray. Bake at 375°F for 30 minutes.

Remove from the oven and add chicken broth and stir.

Top with remainder of grated cheese and bake at 375°F for 30 more minutes, or until potatoes are tender.

Tip: Use broccoli and/or cauliflower to substitute or complement the bell peppers.
