Serves 4-6
Ingredients:
4 large potatoes, peeled and diced
2 red, yellow or orange bell peppers, seeded and diced
1 bunch green onions, diced
Paprika, to taste
Oregano, to taste
Salt, to taste
Course ground black pepper, to taste
1/2 cup flour
8 oz. grated cheese
6 oz. low fat or fat free chicken broth

Directions: Place
diced potatoes, peppers and green onions into resealable plastic bag. Add herbs,
flour and 6 oz. of the cheese. Seal bag and shake vigorously until vegetables
are coated evenly.
Empty bag into 8x8 casserole
dish that's been coated with cooking spray. Bake at 375°F for 30 minutes.
Remove from the oven and
add chicken broth and stir.
Top with remainder of
grated cheese and bake at 375°F for 30 more minutes, or until potatoes are
tender.
Tip: Use broccoli
and/or cauliflower to substitute or complement the bell peppers.
