Place skinless, boneless
chicken into a saucepan and cover with water. Heat over medium heat and cook until
chicken is white all the way through (apx. 20 minutes). Remove chicken from heat
and drain. Run chicken under cool water then dice. In a large bowl, mix together
chicken, celery, mayonnaise, vinegar, salt, pepper, parsley and pimento. Cool
for 20 - 30 minutes. Serve on a bed of lettuce.
