Ingredients:
The quality of the ingredients
are important to the success of this dish. Buy fresh mozzarella which comes in
round balls stored in watery milk. Parmiggiano should be bought in wedges and
grated at home. Fresh basil is easy to grow, or it may be available from better
supermarkets in the produce section. Pignoli, or pine nuts, are small kernels
that are shaped similarly to corn kernels, but they taste like nuts. All these
ingredients should be available at better supermarkets.
- Fresh mozzarella cheese,
sliced about 1/2" thick (approximately 1/4 lb. per person)
- Ripe tomatoes, room temperature,
sliced (any kind, but cherry tomatoes work really well)
- Fresh basil leaves, cut
into small strips
- Extra-virgin olive oil
- Salt and pepper

Directions:
Arrange sliced cheese and
tomatoes on salad plates. Sprinkle liberally with basil. Drizzle generously with
olive oil. Salt and pepper to taste. Enjoy as a first course.
