Serves 4 to 6
Ingredients:
- 1 lb. chicken breast strips
- 1 cup salsa, spicy or
medium
- 1 head lettuce or other
salad greens
- 1 cup shredded cheese,
your favorite variety
- 1 cup ranch dressing

Directions:
Cook and stir chicken on
medium heat until chicken is cooked. Add a small amount of the salsa to skillet.
Combine cooked chicken, lettuce, torn into small pieces, and cheese in salad bowl.
Drizzle salsa and dressing over salad, add hot peppers, nacho chips, sour cream,
or whatever you would like for garnish.

Serving Suggestions:
Serve with other south-of-the-border
style dishes, like black bean salsa.
