Serves 10-12

Ingredients:

  • 1 cup fresh blueberries, rinsed and drained
  • 2 cups flour
  • 2 tbsp flour
  • 1/4 cup sugar
  • 1 tbsp plus 1 tsp baking powder
  • 1/2 tsp salt
  • 1 cup milk
  • 1 egg
  • 2 tbsp vegetable oil

Directions:

Dredge blueberries in 2 tbsp flour. Combine remaining flour, sugar, baking powder and salt. Beat together milk, egg and oil. Add to dry ingredients, stir just until moistened. Fold in berries. Fill greased muffin pan 2/3 full. Bake at 400° F for 20 to 25 minutes. Remove from pan immediately.
