Serves 4 (double the recipe if you have 8 and so on)

Ingredients:

  • 4 boneless, skinless chicken breasts chopped in cubes
  • 1/4 tsp. pepper
  • 3 tbsp. of oil
  • 1 can of mushrooms or 1 cup chopped fresh mushrooms
  • 2 cans of mushroom or chicken soup
  • 2 cups of broccoli or cauliflower (or whatever vegetable you prefer)
  • 1 cup of mayonnaise
  • 2 tsp. of curry powder (or less to your own liking)
  • 2 tsp. lemon juice
  • 2 cups of grated cheddar cheese

Directions:

Heat the oil in a deep pan. Add the cubed chicken pieces and pepper. Cook the chicken at medium heat until white (about 6 min. or less). Drain oil. Arrange pre cooked vegetables in the bottom of a casserole dish. Mix mayonnaise, curry, lemon juice and soup mix together. Put chicken over the vegetables and then put this mixture on top. Sprinkle grated cheddar cheese on top. Cook for 20 minutes @ 375¡F or microwave for about 10 min. Cook long enough to melt the cheese and warm the sauce (providing the veggies are precooked). Serve with rice and enjoy.
