From Nicki and Marina (USA)
We live in Miami, Florida,
where it's hot most of the time, so we try not to spend too much time in front
of the stove. My husband is from Buenos Aires, Argentina, where they eat lots
of pizza 'cause of the Italian influence there and I'm from Haiti, where they
have spicy foods. This is so easy that my 12 year old prepares it for lunch sometimes.
So, here is an Argentine/Haitian-American Pita Pizza.
Serves 4
Ingredients:
- 4 large pitas - 1 per
person (onion, whole wheat or plain)
- 1 can whole tomatoes and/or
1 large sliced tomato
- 1 large purple onion
- 4-6 slices of ham (1-2
slices per pita)
- 1 large green bell pepper
- 2 large garlic leaf per
pita
- 4 oz. part skim mozzarella
(or more if you wish)
- Olive oil
- Black or green olives,
sliced thin
- Spices: oregano, basil,
salt, pepper, garlic powder and rosemary

Directions:
Toast pitas "lightly" on
both sides about 1 minute (watch carefully, as they burn easily) Chop onions,
garlic, ham, green peppers, and tomatoes. Then set aside. On each pita, sprinkle
tomatoes, onions, garlic, ham and green peppers. Then place cheese, olives, spices
and a bit of olive oil, in that order, all over the pita. Bake at 350°F until
cheese melts on top, about 3 minutes. Eat! It's delicious! (You better make 2
per person!!!)
