Serves 6

Ingredients:

• 3 large potatoes sliced
• 4 eggs
• 1/2 lb. sausage
• 1/4 cup onions
• Flour tortillas

Directions:

Peel and slice the potatoes. Fry in oil until tender and brown. Stir in crumbled sausage. Cook until sausage is brown. Stir in 4 eggs and the onions. Continue stirring until eggs are cooked. Place surprise (the cooked potato/egg mixture) in warmed tortillas.

Prep Time: 15 minutes       Cooking Time: 20 minutes
