Serves 6-8
Ingredients:
- 2 lbs. lean ground beef
(or 1 pkg. Harvest Burgers for Recipes)
- 2 pkgs. Jiffy corn muffin
mix
- 1 container egg substitute
(or two eggs)
- 2/3 cups milk
- 8 oz can of whole kernel
corn
- 2 pkgs. taco seasoning
- 1 1/2 cups water
- 16 oz. jar salsa
- 6 plum tomatoes, peeled
and seeded
- 1 med. pkg. corn or tortilla

Directions:
Brown, then drain ground
beef in large skillet. (If using Harvest Burgers for Recipes, add Harvest Burger
after mixing other ingredients.) Add taco seasoning, water and salsa. Add tomatoes
and corn. Simmer until flavors are well blended, about 15 minutes. If necessary,
thicken with a corn starch/water mixture. Prepare Jiffy corn muffin mix following
the cornbread instructions on box. Set mixture aside. Put layer of corn or tortilla
chips on the bottom of a 13 x 9 inch baking dish that's been coated with cooking
spray. Spoon in meat/corn/tomato/salsa mixture. Spoon cornbread mixture on top.
Bake at 400°F for 20-25 minutes or until toothpick inserted into cornbread
on top comes out clean.
Prep Time: 20 minutes
Cooking time: 35-40 minutes
Serving suggestions:
Garnish with grated low
fat cheese and fresh parsley.
