Serves 4-6
Ingredients:
- 1/2 lb shredded beef
- 1/2 medium onion chopped
- 1 small can of green chiles
- 1 cup grated cheddar cheese
(or use your favorite kind for Mexican dishes)
- 6 flour tortillas
- 1 or 2 cans/packets of
Enchilada sauce

Directions:
Chop the onions. Cook the
beef with the onions. Place some of the beef and onion mixture in a tortilla.
Add green chiles and cheese. Roll up tortilla and put in a greased baking dish.
Repeat with other 5 tortillas. Pour enchilada sauce over all the tortillas. If
you have any cheese left, you can sprinkle it on top of the sauce. Bake at 3500
F for 15 to 20 minutes.
