Ingredients:
- Frying Chicken, Cut up
- flour
- cooking oil

Directions:
Put about one inch of oil
in electric frying pan. Preheat to 400 degrees. Clean chicken pieces with water,
and moisten on all sides. Coat each piece thoroughly with flour. Test oil to make
sure it's hot enough, by sprinkling in some flour; if it sizzles, oil is ready.
Tightly place chicken pieces in pan and cover with lid. Let chicken cook on one
side for 10 minutes. Don't pick up the lid during this time to 'peek.' After ten
minutes, open lid and gently but quickly turn chicken pieces over. Top of chicken
should be golden brown and crunchy appearing. Close lid and cook on other side
for 10 more minutes. Remove and put on paper towels to drain.

Serving Suggestions:
Serve hot for dinner with
biscuits and gravy. Leftovers can be eaten cold.
