Serves 4
Ingredients:
- 1/2 cup lowfat buttermilk
- 1 Tablespoon fresh lemon
juice
- 1 teaspoon dried Italian
seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon ground red
pepper
- 1/4 teaspoon ground black
pepper
- 1 pound skinned, boned
chicken breast
- 2 cups breadcrumbs
- 1/3 cup grated Parmesan
cheese
- No-calorie cooking spray

Directions:
Combine first 6 ingredients
in enclosed plastic bag. Add chicken cut into strips, and let marinate one half
hour in refrigerator. Preheat oven to 350 degrees. Combine breadcrmbs and cheese.
Arrange chicken pieces on baking sheet coated with cooking spray and sprinkle
with breadcrumb mixture. Bake at 350 degrees for about 30 minutes.
Prep Time: 20 minutes
Cooking Time: 30 minutes
Serving Suggestions:
Serve with mustard or lowfat
barbeque sauce.
