Serves 8
Ingredients:
- 4 Tablespoons grated
onion
- 2 cups chopped mushrooms
- 3 Tablespoons butter
- 2 cups light cream
- 2 packages frozen spinach
or 4 cups fresh spinach
- 3 Tablespoons grated Swiss
cheese
- 3 Tablespoons flour
- 2 teaspoons salt
- 1/4 teaspoon nutmeg
- 1/4 teaspoon white pepper

Directions:
Sautee onions and mushrooms
in butter. Blend in flour, salt, pepper and nutmeg. Add cream slowly, and stir
until it boils. Spread half the spinach in casserole dish. Cover with half mushroom
sauce, then add second layer of spinach and rest of sauce. Sprinkle with grated
cheese. Bake 40 minutes at 325 degrees F.

Cooking Time: 40 minutes
