Serves 6
Ingredients:
- 1 pound pork tenderloin,
cut into one inch cubes
- 1 Tablespoon oil
- salt and pepper
- 1/2 teaspoon ground cinnamon
- 1 chopped onion
- 1/2 teaspoon ground cloves
- 1/2 teaspoon ground mace
- 3 small apples, peeled,
cored and diced
- 1 cup dried cranberries
- 2 Tablespoons brown sugar
- 1/2 cup apple juice

Directions:
Add pork to oil in skillet
and brown. Add cinnamon and salt and pepper to taste. Remove pork.
Add onion and saute. Add cloves, mace, apples, cranberries and sugar. Saute. Add
apple juice and simmer until tender. Add pork and simmer.
