Serves 6
Ingredients:
- 1 cup red beans or kidney
beans
- 1 onion, diced
- 1 carrot, diced
- 2 ribs celery, diced
- 1 green bell pepper, diced
- 1/2 Tablespoon garlic
powder
- 1/2 teaspoon thyme
- 1/2 Tablespoon oregano
- 1/2 Tablespoon chili powder
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon black pepper
- 1/2 Tablespoon salt
- 1/2 Tablespoon ground
cumin
- 3/4 cup bulgur wheat
- 1 15 oz. can tomoato sauce
- 1/2 Tablespoon basil
- Grated cheese and chopped

Directions:
To one quart hot water,
add cooked beans, vegetables and seasonings (except basil) and cook 20 minutes.
Add bulgur and tomato sauce and simmer 15 minutes. Add basil, salt as needed.
Put in bowls and add cheese and onions to top.
Prep Time: 10 minutes
Cooking Time: 35 minutes
