Serves 4

Ingredients:

  • 1 cup uncooked white rice
  • 4 tablespoons red wine or wine vinegar
  • 2 tablespoons chopped fresh parsley
  • 1/4 teaspoon pepper
  • 1 tablespoon oil
  • 1 tablespoon margarine or butter
  • 4 boneless, skinless chicken breast halves

Directions:

Make rice according to directions on package. In large skillet, heat oil and butter over medium heat. Salt and pepper chicken, and add to hot oil. Saute until done and juice is clear. Divide rice into four and put on plates. Top with chicken. Pour on wine or vinegar, add parsley and pepper. Serve.

Prep Time: 10 minutes        Cooking Time: 25 minutes
