Ingredients:

  • 2 teaspoons salt
  • 2 teaspoons pepper
  • 1 1/2 teaspoon brown sugar
  • 1/2 small chopped onion
  • 1 1/2 teaspoon garlic powder
  • Barbecue Sauce:
  • 2 Tablespoons margarine
  • 1/2 small chopped onion
  • 1 Tablespoon chopped green pepper
  • 1 cup water
  • 1 cup ketchup
  • 3 teaspoons mustard
  • 1 teaspoon salt
  • 2 Tablespoons brown sugar
  • 2 teaspoons lemon juice
  • 1 small chopped onion
  • Two four pound chickens, cut up

Directions:

Make two piles of coals on opposite sides of grill and light. Add hickory chips to hot coals, if desired.

Combine salt, pepper, brown sugar, garlic powder and onion. Sprinkle over chicken and rub into skin and cavities. Set chickens on the grill toward the middle, away from direct heat. Cover and grill 1 to 1 1/2 hours until golden.

While chicken is grilling, combine barbecue ingredients and leave sitting out at room temperature. During last 15 minutes of grilling, brush sauce over chicken.
