Serves 4
Ingredients:
- 1 cup chopped basil
- 1 cup chopped parsley
- 1/4 cup oregano
- 2 Tablespoons thyme
- 1/3 cup olive oil
- 1 quart water
- 4 eight-ounce halibut

- 12 small red potatoes,
scrubbed
- 8 small ears corn, husked
- 20 pearl onions
- 12 jumbo shrimp, shelled
- 2 sticks butter or margarine,
cut into slices

Directions:
In a five gallon stockpot,
layer the potatoes, corn, onions and butter. Add the fish and shrimp and cover
with seasonings and oil. Gently pour in water. Cover the stockpot, let the water
come to a boil and steam over moderately high heat for 15 minutes. Check to make
sure the shrimp is cooked and remove. Replace the lid and cook for 10 minutes
longer. Remove fish when done. Check potatoes for doneness. When they're ready,
remove all ingredients and serve with melted butter or margarine.
