Ingredients:
- Corn chips
- Ranch dressing
- 1 1/3 Tablespoons oil
- 1 Tablespoon minced garlic
- 2 teaspoons soy sauce
- salt and pepper
- Four boneless, skinless
chicken breasts
- 1/3 cup bottled barbecue
sauce
- Salad:
- 1/2 head iceberg lettuce
- 1/2 head romaine lettuce
- Other salad greens, as
desired
- 2 cups shredded Monterey
Jack cheese
- 1 cup canned black beans
- 1 cup corn kernels
- 2 cups diced fresh tomatoes
- 1/3 cup bottled barbecue
sauce
- 1/4 cup sliced scallions

Directions:
Mix together oil, garlic,
soy sauce, salt and pepper. Marinade chicken breasts about 15 minutes. Grill chicken
until cooked through, and juices run clear. Chill. Cut chicken into cubes and
toss with barbecue sauce. Toss together salad ingredients. Top with BBQ chicken
and chips. Add Ranch dressing.
