Serves 6 to 8

Ingredients:

  • 1 cup flour
  • 1/4 teaspoon paprika
  • 1 pound boneless chicken breast
  • 1/4 cup oil
  • 3 ounces sliced fresh mushrooms
  • 1/4 cup lemon juice
  • 1 cup chicken broth
  • 1/4 teaspoon garlic salt
  • 2 Tablespoons dry white wine (optional)

Directions:

Remove skin from chicken and cut into strips. Mix flour and paprika, and add salt and pepper to taste. Coat chicken in this flour mixture. Saute chicken in hot oil until light brown and juices run clear. Remove from skillet. Add mushrooms, lemon juice and broth to skillet. Simmer to make sauce. Add garlic and wine and stir sauce briefly to heat. Pour sauce over chicken, add chopped parsley and serve.
