Ingredients:

3 lbs. beef stew meat, cut into 1 1/2 inch cubes.
- salt
and pepper
- 1/2
cup butter
- 2
1/2 lb small onions, peeled
- 1
six oz. can tomato paste
- 1/3
cup red wine
- 1
Tablespoon brown sugar
- 1
clove garlic, minced
- 1
bay leaf
- 1 cinnamon stick
- 1/4
teaspoon ground clovers
- 2

Directions:
Season
meat with salt and pepper. Melt butter in Dutch oven or
heavy kettle with cover. Add meat and coat with butter
but do not brown. Arrange onions over meat. Mix tomato
paste, wine, vinegar, sugar and garlic; pour over meat
and onions. Add bay leaf, cinnamon, cloves, cumin and
currants (if desired). Cover kettle and simmer 3 hours
or until meat is tender. (Do not stir.)
