Serves 8
4 egg whites
1 cup caster sugar (fine white sugar)
1/2 tsp. vanilla
1 tsp. white vinegar
2 tsp. cornflour (cornstarch)
1 pint of whipping cream

Directions: Whisk
the egg whites in a bowl with the sugar, vanilla and vinegar until stiff, then
fold in the cornstarch. Place onto a lightly greased baking sheet and bake at
250° F for 1½ hours without opening the oven.
