Serves 8


• 4 egg whites
• 1 cup caster sugar (fine white sugar)
• 1/2 tsp. vanilla
• 1 tsp. white vinegar
• 2 tsp. cornflour (cornstarch)
• 1 pint of whipping cream
• Seasonal fresh fruit

Directions: Whisk the egg whites in a bowl with the sugar, vanilla and vinegar until stiff, then fold in the cornstarch. Place onto a lightly greased baking sheet and bake at 250° F for 1½ hours without opening the oven.
