Serves 18
Ingredients:
1 cup flour
1/4 cup brown sugar
1/2 cup chopped walnuts
1/2 cup melted margarine
2 egg whites
3/4 cup sugar
16 oz. of strawberries (fresh or frozen)
2 tbsp. lemon juice
1 cup whipping cream (or 4 oz of Cool Whip)

Directions: Stir
together flour, brown sugar, walnuts, and margarine. Spread mixture evenly in
13x9 pan. Bake at 350ºF for 20 min. Remove from oven and cool. Remove 1/3
of mixture from bottom of pan and set aside. Spread remaining 2/3 of mixture across
bottom of pan.
In large mixing bowl combine:
egg whites, sugar, strawberries, lemon juice, beat at low speed until mixture
thickens (approx. 2 min.). Beat at high speed til peaks begin to form (10 min.).
Fold in whipping cream. Spoon mixture into pan on top of crumb crust. Top with
the extra crumbs. Freeze 6 hrs or overnight. Cut into 18 squares.
