Serves 20

Ingredients:

    • 6 eggs
    • 2 cups sugar
    • 1/2 cup hot water
    • 2 cups flour
    • 2 tsp. baking powder
    • 1 orange
    • 1 pint blueberries
    • 1 lb. Strawberries, cut in half

    FROSTING
    • 2 cups milk
    • 2 egg yolks, beaten
    • 1/2 cup cornstarch
    • 1/2 cup sugar
    • 1 1/2 tsp. vanilla
    • 1/2lb. butter
    • 1 cup powdered sugar

Directions:

Cake:Heat oven to 350o. Lightly grease two 9"x13" inch pans. Separate eggs. Beat yolks until light and fluffy. Gradually add one cup of sugar while beating. Finely grate orange peel, about ¼ cup. Squeeze the juice of the orange. Mix juice, peel and water together. Combine with egg yolk mixture.Sift flour and baking powder. Add to mixture.Beat egg whites until stiff. Gradually add one cup sugar. Fold into mixture.Pour into pans. Bake until wooden pick inserted in center comes out clean, about 20 minutes. Cool. Frost top of cakes with Sunshine Frosting. Decorate with strawberries and blueberries to look like U.S. flag. Or you can use colored frosting to make other flags.

Frosting:Mix milk, egg yolks, cornstarch and sugar in 1-quart saucepan. Cook over medium heat, stirring often, until thick, about 10 minutes. Stir in vanilla.Cream butter and sugar. Add to mixture. Cool.
