Serves 8-10
Ingredients:
Crust
1 stick unsalted butter
1/4 cup sugar
1 1/2 cup flour
1/2 tsp. salt
1 tsp. vanilla
1 tsp. baking powder
1 egg
Filling
5-6 large Macintosh apples
1/2 cup sugar
1 tbsp. cinnamon

Directions: Preheat oven to 350° F. Cream
together butter and sugar in an electric mixer. Add in the rest of the ingredients,
and mix just until the dough is crumbly, but holds together. Do not over-mix.
Butter or spray a 9" loose
bottom pan, or a form on a baking sheet. The sides should be about 2" high. Press
the dough into the form and up the sides.
Peel, core, and halve the
apples. Slice each half, making vertical slices about 1/8"
wide - keeping the shape of the apple halves. Arrange on the crust.
Sprinkle the apples with
cinnamon and sugar. Bake at 350° F for 25 to 35 minutes, until the crust turns
golden brown, and the apples soften.
