Serves 8

Ingredients:

    • 2 cups flour
    • 1 1/2 Tablespoons sugar or sugar substitute
    • 1/2 Tablespoon baking powder
    • 1/8 teaspoon salt
    • 3 Tablespoons chilled margarine or lowfat tub margarine
    • 1/4 cup evaporated fat-free milk
    • 1 large egg yolk

    Filling
    • 5 cups peeled or canned peaches
    • 1/2 cup packed brown sugar or brown sugar substitute
    • 3 Tablespoons flour
    • 1/8 teaspoon ground nutmeg
    • dash of salt
    • No-calorie cooking spray

Directions:

Crust: Blend 1 cup flour, 1/12 Tablespoon sugar, baking powder, and salt with sifter. Add butter and mix to resemble coarse meal. Combine milk and egg yolk. Set aside 1/2 Tablespoon milk mixture. Add remaining milk mixture, and blend. Chill mixture one half hour, then roll dough into a rectangle. Preheat oven to 350 degrees.

Filling: Combine peaches, sugar, 3 Tablespoon flour, nutmeg, and salt into large bowl. Spoon into 9x9 baking dish coated with cooking spray. Place dough on mixture. Brush dough with remaining milk mixture. Cut slits in dough. Sprinkle with sugar, if desired. Bake at 350 degrees for 40 minutes.

Prep Time: 30 minutes        Cooking Time: 35 to 40 minutes

Serving Suggestions:
Serve with vanilla ice cream.
